Avocado and Feta smash

A simple but satisfying lunch or dinner at work or at home.

Perfect to make up a large serve and eat over the next few days (or feed a family)


Serves 4



Ingredients:

  • 4 ripe avocados

  • 1 tablespoon of lemon juice

  • 100g (half packet) of feta cheese

  • 4 teaspoons of chia seeds

  • 4 teaspoons of mixed seed

  • 1 large or 2 small pieces of grainy bread per serve or a small sourdough bread roll each


Prep:

  1. Cut avocado in half and use a spoon to scoop the contents into a bowl.

  2. Mash the avocado with a fork to create a chunky paste

  3. Add the lemon juice and mix well through the avocado

  4. Crumble the feta into the avocado and mix well

  5. Place bread in toaster or prepare bread roll

  6. Add avocado and feta mix onto toast or roll and sprinkle with chia and mixed seeds on each serve



Tip:

  • Goes well with some cherry tomatoes, green or red peppers sliced on the side

  • The lemon juice is to stop the avocado turning brown- so don't skip it. (You can use lime juice instead).

  • For an easy work lunch you can take the chia and mixed seeds, avocado/feta mix and bread separately and stick it together in a minute on your lunch break
